The grapes were hand-harvested and whole-bunch pressed into stainless steel and concrete for spontaneous fermentation. After 8 months of aging on the primary lees in concrete vessels, the lots were blended and bottled with coarse filtration, bentonite fining, and a touch of sulfur. This all-natural wine is tightly structured and showcases flavors of yellow apple and subtle apricot, enhanced by a granitic mineral quality. The palate is marked by crisp acidity balanced with round fruitiness and a savory finish.
