Arbois-Pupillin Chardonnay La Bidode is and organic wine fermented in wood, with malolactic fermentation taking place naturally. The wine undergoes its élevage in "demi-muid" barrels (600 liters), where it spends at least two years before being bottled. During this time, very little SO2 is used, and although the wine isn’t intentionally aged “sous voile,” it is never topped up, with only a single racking performed. The result is a wine with vibrant, firm acidity, a rich mouthfeel, and a honeyed nose and palate. Its finish is long, persistent, and dominated by mineral notes.
