All La Narval shellfish are selected by size, and a meticulous cleaning process is followed to remove all the sand. They are washed in special machines up to six times. These scallops, from the famous Galician Rías Gallegas, are then prepared in a typical Galician sauce with tomato, oil, onion, and spices.
