These garfish are caught in the Cantabrian Sea off the north coast of Spain in the fall and winter. They’re small fish similar in size to a sardine, with a rich, meaty flavor similar to mackerel. Also known as needlefish for their long, narrow beaks, they’re slim with beautiful stripes down their backs, and make an elegant impression upon opening—perfect for serving in the tin at a cocktail party. Or simply dress them on a plate with lemon, olive oil, and fresh herbs.
