Sourced from five parcels of a 25-hectare certified organic vineyard with clay soils, this wine is made exclusively from Tempranillo grapes, ranging from 18 to 50 years old. Hand-harvested and fully destemmed, it undergoes spontaneous fermentation and maceration in concrete tanks for about 10 days with indigenous yeasts. Afterward, the wine is aged in stainless steel with fine lees for approximately 5 months.
