Dario is renowned for crafting highly drinkable, sea-salt-kissed island wines. He works in the elevated plains 400 meters above sea level, just outside Partinico, 30 km west of Palermo. Aiming to enhance the acidity, he harvests early in August rather than September. The wine offers aromas of pithy stone fruits, cantaloupe, dried citrus peel, and sandalwood, with dried floral notes that linger into a long, saline finish. It straddles the line between an orange wine and a white wine, spending 50 hours on the skins for added complexity.
