This pet-nat blends 80% Vermentino and 20% Muscat from two sites in Applegate Valley. The well-draining granite soils and wide temperature swings enhance the fruit's acidity. After direct-pressing into stainless steel and fermenting with ambient yeasts, the wine was chilled to retain residual sugar and then hand-bottled under a crown cap. It finished fermentation in the bottle, yielding a dry pet-nat with vibrant citrus, tropical fruit, and a fresh, saline finish that reflects the sunny 2023 vintage.
