Domaine Rolet is undergoing a complete conversion to organic farming; no herbicides or pesticides are ever used, and the soils are constantly plowed, creating beautiful, healthy vineyards. This wine is an incredibly complex crémant with fine bubbles and a wonderfully saline-infused minerality. The green apple, tangerine, and white flowers are abundant, leading to a long and elegant finish.
