Following a manual harvest during the night, the grapes go through a rigorous selection process. They are then entered into the gravity fermentation vats and go through spontaneous alcoholic fermentation, with little intervention throughout the entire process and low sulfurous content. The resulting wine is ruby violet in color. There’s an intense, fruity nose with hints of ripe cherry and some menthol notes. On the palate, there is a smooth, round attack with good freshness, round tannins, and a long finish.
