Fermented and aged in neutral Burgundy barrels and left on the lees for nine months with no battonage. Bottled unfined and unfiltered, the result is palate notes of honeysuckle, ripe peach, green apples, chamomile tea, and kumquat. A fun and invigorating wine with nervy acids. Serve with grilled fish, white pasta, white pizza, octopus, and any summertime seafood.
