The “Pitti” blend by Weingut, an organic producer in Southern Austria, comes from vines that average 12 to 15 years in age. The grapes are manually harvested, destemmed, and left for 18 days on skins before fermenting in steel with natural yeasts for four days and on lees for three months. The wine is then aged for six months in steel and roughly filtered before bottling. The results are spicy and slightly smoky, with hints of tobacco leaf. A perfect cool evening wine, ideally paired with Tuna au Poivre.
