This orange Pet Nat is made from Verdejo grapes grown in northern Spain and brought directly to the Winery in Alsace. Vinification begins with 4 days of skin contact and after pressing fermentation continues in stainless steel tanks. It is then aged in the bottle for 6 months resulting in a vibrant orange hue and a fragrant blend of citrus, stone fruit, and floral notes. Wild yeast fermentation adds complexity with a touch of funk. On the palate, it’s fresh and lively, with bright acidity and flavors of ripe peaches, apricots, and citrus, balanced by earthy undertones and minerality. The natural effervescence from the Pet-Nat style gives it a creamy texture, while the finish is crisp, fruity, and slightly saline, perfect for pairing with a variety of dishes.
