This wine was crafted from hand-harvested Avesso grapes. After total destemming, fermentation occurs in horizontal vats at low temperatures, ensuring full contact with the grape skins to enhance the “tanning” process. Following fermentation, the wine ages in stainless steel vats for 12 months before bottling. With an austere yet elegant profile, it’s full-bodied and voluminous, featuring an intense color from prolonged skin contact. The initially sharp tannins soften with bottle aging. On the palate, it offers complex notes of peach, dried apricot, and almond, leading to a refreshing, saline finish. This wine pairs beautifully with peach, apricot, and salty dishes.
