Tristan's Les Vignes du Versant Sud is an extremely limited, biodynamic Blanc de Blancs from Trélou-sur-Marne, made with 100% Chardonnay. The base wine vintage is 2020, blended with a perpetual reserve dating back to 2008. This non-dosé Champagne is aged for 3 years on lees, with no filtration or cold stabilization, resulting in just 500-800 bottles produced.
The wine is a vibrant straw yellow with golden reflections, offering fresh notes of lemon zest, green apple, apricot, and a touch of brioche. With fine bubbles and a persistent minerality, it's a complex, focused Champagne with exceptional depth.
