Made from hand harvested Cayuga White, a hybrid variety bred by Cornell University in 1945. The grapes were whole cluster pressed and spontaneously fermented in 65% stainless steel and 35% neutral barrel. This is a crushable, bright, high-toned wine with notes of spearmint, green apple, and Smarties®.
