The Palomino grapes were hand-harvested and underwent spontaneous fermentation in open-top stainless-steel tanks for three days, soaking with the skins. The juice was pressed off the skins and finished fermenting for 11 months. The wine was then racked into the tank and bottled without fining or filtration, with a minimal addition of sulfur. The wine’s bouquet features a swirl of yellow fruits and dried hay aromas that rise from the glass. This wine is made naturally and organically. On the palate, there’s a subtle saltiness combined with mild floral notes and gentle acidity. The texture is luscious and velvety, yet light, leading to a vibrant and bright finish.
